Crispy (non-fried) Chicken


  • Chicken Thighs or Legs (skinned)

  • Dill (*chopped fresh) - key ingredient

  • Basil

  • Onion Powder

  • Garlic Powder

  • a touch of plain Bread Crumbs

  • Kosher Salt (pinch) or Mrs. Dash


Pre-heat oven on Bake at 350 degrees.

Clean chicken and removal ALL skin.

In a large bowl, mix together above ingredients.

Pour the above mix onto a large flat plate.

Dip the chicken into the mix, covering both sides of the chicken. Gently shake the plate to fully coat the chicken.

Place a sheet of aluminum foil over a large size flat cooking tray.

Lightly spray the foil with olive oil spray (just a slight mist).

Place the breaded chicken onto the tray.

*Sprinkle a little more Dill flakes over the chicken.

Bake at 350 degrees uncovered in middle rack of oven for ~ 1 hour until crispy brown.

Flip over half-way.

Serve with asparagus, cauliflower, or mushrooms.
