Recipes & Dieting Tips: Stuffed Pepper, Cabbage or Zucchini


Try stuffing any of the below peppers, cabbage or zucchini for a scrumptious low calorie meal.

A. Shell - Either use: 1. Pepper: Poblano (cut long way) or Red/Green/Yellow (cut top 1/5 off and replace top later); or 2. Cabbage leaf (boil leaf for 3 minutes to soften), or 3. Zucchini - cut in 1/2 the long way and then scooped out. Save this scooped out zucchini to cook with the below sauteed ground turkey/chicken. B. Stuffing. Saute ground turkey or ground chicken on stove top with pinch of salt/pepper. (if making stuffed zucchini, add and cook the scooped out above zucchini to the saute) B. Sauce. Blend together: - Red tomatoes(or green tomatoes for spicy kick) - Garlic - Onion - Cilantro Directions Fill pepper, cabbage, or zucchini with the above sautéed turkey/chicken. Place in medium deep oven dish. Pour blended tomato mixture over stuffed pepper/cabbage/zucchini. Bake at 350 degrees, uncovered for 20-25 minutes.
